Changing it
From the language switcher in the header, or from your account settings. There is no save step and no reload.
Three different languages, and they are not the same setting
This is the thing worth understanding, because conflating them causes most of the confusion:
Your interface language. What you read the dashboard in. Yours alone; changing it affects nobody else.
An interview's language. What questions are asked and spoken in. Chosen by the recruiter when they schedule, and it decides the candidate's entire experience — the questions, the spoken prompts, the consent screens and the identity pledge.
A document's language. A job description or a report has its own. A recruiter reading an English dashboard can publish a Tamil job description and receive a Tamil report.
So reading the dashboard in Hindi does not change the language of an interview somebody already scheduled for you, and it never will — that would silently change what a candidate is asked.
Right-to-left languages
Arabic renders right-to-left throughout. If anything looks mirrored incorrectly rather than deliberately, that is worth reporting.
Where translation is still catching up
New copy is written in English and translated in waves, so a very recently shipped screen occasionally shows an English string in another language. Help Centre articles say so explicitly when you are reading an untranslated one, rather than leaving you to wonder.
